Avocado Mango Rice Salad Recipe
What You Need
• 2 small ripe Hass Avocado, halved, seeded, peeled and cubed
• 2 cups cooked brown rice
• 1 ripe mango, peeled and cubed
• 15-ounce black beans, drained
• ½ cup peppers, diced
• 2 green onions, thinly sliced
• 2 Tbsp. fresh lime juice
• 1 Tbsp. olive oil
• 2 Tbsp. chopped fresh cilantro
• 1/2 tsp. salt
• 1/4 tsp. Pepper

In a large bowl combine rice, beans, mango, peppers, green onions, lime juice, oil, cilantro, salt and pepper. Add avocado; toss gently.
