A lovely red hue with hints of yellow, this species is a hybrid of the Jonathan and the Golden Delicious and bears a faint physical resemblance to both. Like the Golden Delicious, Jonagold is sweet and thin-skinned, but it takes from the Jonathan a smooth skin and tart flavor. It is versatile and can be used in any recipe calling for apples. Apples ripen quickly at room temperature; ten times as fast as an apple kept at 32° Fahrenheit. Store apples in a plastic bag in the refrigerator away from strong-odored foods such as cabbage or onions to prevent flavor transfer. Rub cut apples with lemon juice to keep slices and wedges creamy white for hours.Good-quality Jonagold apples will be firm with smooth and clean skin. The coloring is bright red over gold. Test the firmness of the apple by holding it in the palm of your hand. (Do not push with your thumb). It should feel solid and heavy, not soft and light.
