Oven Baked Tri-Tip with Roasted Gold Potatoes
What You Need

• 1 Tri-Tip – sprinkled with Hudson Bay Seasoning

• 2 lbs gold potatoes, cut into wedges
• 1 onion, chopped
• 2-3 carrots, cut into wedges
• 3 sprigs rosemary, chopped
• Light olive oil
• 1 lemon, juiced

Preheat oven to 350. Combine potatoes, onion, carrots and rosemary in a baking dish. Toss with a light amount of olive oil. Squeeze lemon juice on top. Cover and bake for about 35 minutes in center of oven. Move to bottom rack. Place tri-tip on baking sheet covered with foil. Bake on middle rack for 17 minutes per lb.
