GARBANZO & WALNUT SALAD WITH ELDERBERRY DRESSING
What You Need
• 1 can (about 1#) garbanzos, drained
• 2/3 cup finely chopped walnuts
• Small inner leaves of a head of romaine lettuce, washed and crisped
• Elderberry Dressing (recipe below)

Prepare Elderberry Dressing. In a bowl, mash garbanzos until coarsely crumbled; stir in walnuts. Add dressing and mix until well blended. If made ahead, cover and refrigerate for up to 6 hours; let come to room temperature before serving. Spoon salad into center of a shallow bowl; surround with lettuce leaves to use as scoopers. 6 appetizer servings. Elderberry Dressing: In a small bowl, combine 6 tablespoons Elderberry White Balsamic; 1/4 cup avocado olive oil; 2 cloves garlic minced; and 1 teaspoon salt. Mix until well blended.
