What You Need

• 1 lb green beans
|
• 6 cloves garlic, smashed
|
• Olive oil
|
• 2 tsp. mixed herbs, chopped
|
• 2 tsp. mustard.
|
• Salt & pepper to taste
|

• 3 lbs red potatoes
|
• ¼ cup olive oil
|
• 1 ½ tsp salt
|
• 1 tsp. black pepper
|
• 6 cloves garlic, minced
|
• 2 Tbsp fresh parsley, minced
|

How You Make It
|
CHARRED GREEN BEANS: Toss green beans on a baking sheet with garlic, ¼ cup water and 1 Tbsp. olive oil. Roast at 450 degrees until the beans are tender and slight charred, about 20 minutes. Toss with 2 tarragon, mustard and salt and pepper to taste.
GARLIC ROASTED POTATOES: Preheat oven to 400 degrees. Cut the potatoes in half or quarter and place in a bowl with olive oil, salt, pepper and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure evening browning. Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.
