Roasted Carrots
What You Need
• 2 lb Carrots
• 1 Red Onion
• 1 Tbsp. Olive Oil
• 1/8 tsp. allspice
• Salt to taste
• ¼ cup Raisins
• ¼ cup Walnuts
• 1 Lemon, juiced
• Cilantro, chopped
• Dill, chopped
How You Make It
Cut carrots into 1 inch sticks. Toss with onion, oil, allspice, and salt to taste on baking sheet. Roast at 425 for 10 minutes. Meanwhile, soak raisins in ¼ cup water. Add the raisins and walnuts to the carrots; stir and continue roasting for 10 more minutes. Toss with the lemon juice, cilantro, dill and salt to taste.
